Pie Iron Pizza Pockets (Printer-friendly)

Pie iron pockets with pizza sauce, melted mozzarella and toppings — crispy outside, gooey inside.

# What You Need:

→ Bread

01 - 8 slices white or whole wheat sandwich bread

→ Sauce & Cheese

02 - 1/2 cup pizza sauce
03 - 1 cup shredded mozzarella cheese

→ Toppings

04 - 12-16 slices pepperoni or salami (optional)
05 - 1/4 cup sliced black olives
06 - 1/4 cup diced bell peppers
07 - 1/4 cup sliced mushrooms
08 - 1/4 teaspoon dried Italian herbs (optional)

→ For Brushing

09 - 2 tablespoons butter, melted

# How to Make It:

01 - Preheat the pie iron over a campfire or stovetop for 2 to 3 minutes.
02 - Brush one side of each bread slice with melted butter. Arrange 4 slices, buttered side down, on a clean work surface.
03 - Spoon 2 tablespoons pizza sauce onto each bread slice. Sprinkle evenly with shredded mozzarella, then add preferred toppings and dried Italian herbs if desired.
04 - Place remaining bread slices on top, buttered side facing up, to form sandwiches.
05 - Place each sandwich into the preheated pie iron. Close and secure the iron, trimming off any excess bread around the edges.
06 - Cook over medium campfire heat for 3 to 4 minutes per side, until the exterior is golden brown and cheese is melted inside.
07 - Carefully open the pie iron. Transfer pockets to a plate, allow to cool briefly, and serve immediately.

# Expert Tips:

01 -
  • They’re almost too easy—customizable, fast, and endlessly fun for camping or backyard fires alike.
  • There’s comfort in the messiness, and a delight when the golden pocket splits open to reveal bubbling, stretchy cheese inside.
02 -
  • The first time I overloaded the filling, gooey cheese escaped and fused the pocket to the pie iron—go easy on toppings.
  • Brushing the bread thoroughly with butter on both sides guarantees easy release and a perfectly toasted shell every time.
03 -
  • Don’t be afraid to peek: check doneness early so you never miss that ideal golden color.
  • A light sprinkle of cornmeal on the bread adds flavor and helps prevent sticking.
