- Preheat oven to 350°F. Bake vanilla cake according to package directions, then cool completely on wire rack.
- Break cooled cake into fine crumbs using hands or food processor. Transfer to large mixing bowl.
- Beat softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy, about 2-3 minutes.
- Combine frosting with cake crumbs, mixing until evenly distributed. Mixture should hold together when pressed.
- Scoop tablespoon portions and roll into 24 uniform balls. Arrange on parchment-lined baking sheet. Freeze 20 minutes until firm.
- Melt white chocolate or candy melts in 30-second intervals. Dip each ball, ensuring complete coverage. Return to lined tray.
- While coating remains soft, pipe or dip small circle of blue or green candy melt in center of each eyeball.
- Once coating sets, place small dot of dark chocolate or black candy melt in center of each colored iris.
- Use red gel or decorating gel to create thin, radiating veins around each eyeball for spooky effect.
- Allow decorations to harden completely at room temperature, about 15 minutes. Serve chilled for best texture.
