01 - 1 box vanilla cake mix (15.25 oz) or 14 oz homemade vanilla cake
02 - 3 large eggs
03 - ½ cup vegetable oil
04 - 1 cup water

→ Cream Cheese Filling

05 - 3.5 oz cream cheese, softened
06 - 3.5 oz unsalted butter, softened
07 - 7 oz powdered sugar
08 - 1 teaspoon vanilla extract

→ Decoration

09 - 14 oz white chocolate or white candy melts
10 - 1.75 oz dark chocolate or black candy melts
11 - 1.75 oz blue or green candy melts OR colored icing
12 - Red gel food coloring or red decorating gel

# How to Make It:

01 - Preheat oven to 350°F. Bake vanilla cake according to package directions, then cool completely on wire rack.
02 - Break cooled cake into fine crumbs using hands or food processor. Transfer to large mixing bowl.
03 - Beat softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy, about 2-3 minutes.
04 - Combine frosting with cake crumbs, mixing until evenly distributed. Mixture should hold together when pressed.
05 - Scoop tablespoon portions and roll into 24 uniform balls. Arrange on parchment-lined baking sheet. Freeze 20 minutes until firm.
06 - Melt white chocolate or candy melts in 30-second intervals. Dip each ball, ensuring complete coverage. Return to lined tray.
07 - While coating remains soft, pipe or dip small circle of blue or green candy melt in center of each eyeball.
08 - Once coating sets, place small dot of dark chocolate or black candy melt in center of each colored iris.
09 - Use red gel or decorating gel to create thin, radiating veins around each eyeball for spooky effect.
10 - Allow decorations to harden completely at room temperature, about 15 minutes. Serve chilled for best texture.

# Expert Tips:

01 -
  • These terrifyingly tasty treats disappear faster than ghosts at dawn
  • Kids go absolutely wild for the gross-out factor while adults secretly love them too
02 -
  • If the cake balls start getting too soft and sticky while dipping, pop the tray back in the freezer for 10 minutes
  • Candy melts are much more forgiving than actual chocolate for beginners because they are formulated to stay smooth and set firmly
03 -
  • Work quickly once you start dipping because the cake balls will soften up as they come to room temperature
  • Keep a toothpick handy to pop any air bubbles that appear in the white chocolate coating immediately after dipping
