Collagen Fruit Jellies (Printer-friendly)

Soft, chewy fruit jellies boosted with collagen for a healthy, guilt-free treat the whole family will love.

# What You Need:

→ Fruit Base

01 - 1 cup 100% fruit juice (orange, mixed berries, or apple)
02 - 2 to 3 tablespoons honey or maple syrup, to taste

→ Collagen & Gelling

03 - 2 tablespoons grass-fed collagen peptides (about 20 g)
04 - 3 tablespoons unflavored gelatin powder (about 30 g)

# How to Make It:

01 - Pour the fruit juice into a small saucepan. Sprinkle the gelatin evenly over the surface and let it sit for 2 to 3 minutes to bloom.
02 - Set the saucepan over low heat and stir constantly until the gelatin dissolves completely. Do not allow the mixture to boil.
03 - Remove from heat. Add the collagen peptides and honey or maple syrup if using, stirring thoroughly until fully combined.
04 - Transfer the mixture into silicone molds or a small baking dish lined with parchment paper.
05 - Refrigerate for at least 2 hours or until the jellies are completely firm and set.
06 - Once fully set, gently remove the jellies from the molds. If using a baking dish, cut into bite-sized squares with a paring knife.
07 - Keep the jellies in an airtight container stored in the refrigerator for up to 1 week.

# Expert Tips:

01 -
  • They take barely fifteen minutes of active work, which means you can whip them up while your coffee is brewing and still make it out the door on time.
  • The collagen addition turns a simple candy into something that actually supports your skin and joints, and nobody will guess these are functional because they taste like a treat.
02 -
  • If the gelatin does not bloom properly before heating, your jellies will have a grainy, unpleasant texture that no amount of chilling can fix.
  • Boiling the mixture destroys the setting power of gelatin, so keep the heat low and patient, and your reward will be a perfectly tender set every time.
03 -
  • Spray your silicone molds with the lightest possible mist of oil before pouring in the mixture, and every single jelly will release cleanly without a struggle.
  • The collagen peptides must go in after the pan comes off the heat, because high temperatures degrade the collagen and you lose the very benefit you are trying to add.
