- In a large mixing bowl, combine the ground turkey, finely diced onion, minced garlic, chopped fresh parsley, smoked paprika, Dijon mustard, salt, and black pepper. Mix gently until all ingredients are just incorporated.
- Divide the turkey mixture into four equal portions and gently form them into patties.
- Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Place the patties in the skillet and cook for 5–6 minutes per side, or until they are fully cooked through and reach an internal temperature of 165°F.
- While the turkey patties are cooking, prepare the salad base by arranging the mixed salad greens, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, diced avocado, and shredded carrots evenly into four serving bowls.
- In a small bowl, whisk together the plain Greek yogurt, lemon juice, olive oil, honey, salt, and pepper until well combined to create the dressing.
- Once cooked, place one turkey patty on top of the salad base in each bowl. Drizzle generously with the prepared yogurt dressing.
- Serve your Turkey Burger Salad Bowls immediately and enjoy.
