01 - In a large bowl, combine flour, instant yeast, sugar, and salt. Pour in warm water and olive oil, mixing until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 5 to 7 minutes until smooth and elastic. Cover with a clean towel and let rise in a warm spot for 1 hour, or until doubled in size.
02 - While the dough rises, combine mozzarella, cheddar, Parmesan, cream cheese, minced garlic, chopped parsley, and black pepper in a medium bowl. Stir until all ingredients are evenly distributed and the mixture holds together.
03 - Preheat oven to 375°F. Line a baking sheet with parchment paper and set aside.
04 - Punch down the risen dough and divide into 18 equal pieces. Flatten each piece into a small circle roughly 3 inches across. Spoon about 1 tablespoon of the cheese filling into the center of each round. Pinch the edges firmly to seal and roll into a smooth ball.
05 - Place the stuffed dough balls seam-side down on the prepared baking sheet, spacing them about 1 inch apart.
06 - Bake for 18 to 20 minutes, rotating the sheet halfway through, until the tops are golden brown and the cheese is bubbly inside.
07 - While the bread bites bake, stir together melted butter, minced garlic, and chopped parsley in a small bowl.
08 - Immediately upon removing from the oven, brush each bread bite generously with the garlic butter mixture. Sprinkle with flaky sea salt. Allow to cool for 2 to 3 minutes before serving warm.
