# How to Make It:

01 - Cook the noodles according to package instructions. Drain thoroughly and rinse under cold running water to halt cooking and prevent sticking. Set aside until ready to combine.
02 - In a small bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, sesame oil, and cornstarch if using until smooth and fully incorporated. Reserve for later use.
03 - Heat a large wok or deep skillet over medium-high heat. Add a splash of oil and stir fry turkey slices for 3 to 4 minutes until just cooked through and lightly golden. Transfer to a plate and set aside.
04 - Add a small amount of additional oil to the wok. Stir fry garlic, ginger, and red onion for 1 minute until fragrant and the onion begins to soften.
05 - Add bell peppers, carrots, and sugar snap peas to the wok. Stir fry for 3 to 4 minutes until vegetables are crisp-tender and brightly colored.
06 - Return the cooked turkey to the wok. Add the prepared noodles and sauce mixture. Stir fry for 2 to 3 minutes, tossing constantly until everything is evenly coated and heated through.
07 - Stir in spring onions and crushed red pepper flakes if using. Serve immediately while hot, garnished generously with toasted sesame seeds and fresh coriander.

# Expert Tips:

01 -
  • Everything happens in one pan, meaning less cleanup and more time enjoying your meal
  • The sauce hits that perfect balance where sweet meets heat and coats every single strand of noodle
02 -
  • Do not skip rinsing the cooked noodles under cold water or they will turn into a gummy mess
  • Have everything chopped and ready before you turn on the heat, stir fries wait for no one
03 -
  • Let your wok get properly hot before adding any ingredients, that sizzle is where the magic happens
  • Cook your vegetables in batches if your wok is crowded, otherwise they will steam instead of stir fry
