01 - In a small saucepan over medium heat, whisk together almond milk, heavy cream, cocoa powder, and chopped chocolate until well combined.
02 - Stir continuously until the chocolate is melted and mixture is smooth and steaming, about 3-4 minutes—do not allow to boil.
03 - Add erythritol, vanilla extract, and sea salt. Whisk until sweetener is fully dissolved and hot chocolate reaches desired creaminess.
04 - Taste and adjust sweetness level if needed by adding more sweetener.
05 - Pour into serving mugs. Top with sugar-free whipped cream and shaved chocolate if desired. Serve immediately while hot.
