01 - In a large mixing bowl, add old-fashioned rolled oats, ground flaxseed, mini chocolate chips, and unsweetened shredded coconut. Mix to evenly distribute.
02 - Add creamy peanut butter, honey or maple syrup, vanilla extract, and salt to the dry mixture.
03 - Stir the mixture well using a spatula or wooden spoon until all ingredients are fully combined and the mixture is cohesive and sticky.
04 - Using clean hands or a small cookie scoop, portion and roll the mixture into 1-inch balls.
05 - Arrange the formed bites on a parchment-lined baking sheet or plate. Refrigerate for a minimum of 30 minutes to set.
06 - Transfer set bites to an airtight container and store in the refrigerator for up to one week.
