Ground Turkey Sausage (Printer-friendly)

Savory homemade turkey sausage seasoned with sage, thyme, and paprika for a flavorful lean protein option.

# What You Need:

→ Meats

01 - 1 lb ground turkey, preferably thigh meat for enhanced flavor

→ Spices & Seasonings

02 - 1 tsp kosher salt
03 - 1/2 tsp black pepper
04 - 1 tsp dried sage
05 - 1/2 tsp dried thyme
06 - 1/2 tsp crushed red pepper flakes
07 - 1/2 tsp smoked paprika
08 - 1/2 tsp garlic powder
09 - 1/2 tsp onion powder

→ Herbs

10 - 2 tbsp chopped fresh parsley

→ Other

11 - 1 tbsp olive oil for cooking

# How to Make It:

01 - Place ground turkey in a large mixing bowl. Add all spices, seasonings, and fresh parsley. Mix gently until just combined—avoid over-mixing to prevent dense texture.
02 - Divide mixture into 8 equal portions and form into patties approximately 1/2 inch thick. Alternatively, leave loose for crumbling into recipes.
03 - Heat olive oil in a skillet over medium heat. Place patties in the pan and cook for 4–5 minutes per side until golden brown and internal temperature reaches 165°F.
04 - Serve warm as breakfast patties, in sandwiches, or crumble into scrambled eggs, pasta dishes, or breakfast bowls.

# Expert Tips:

01 -
  • You get all the savory satisfaction of breakfast sausage with a fraction of the fat and calories
  • The spice blend is completely customizable so you can make it your own signature blend
  • Mixing up a batch takes literally ten minutes and keeps in the freezer for months
02 -
  • The single most important thing is using turkey thigh meat instead of breast, because I learned the hard way that breast meat turns into hockey pucks
  • Letting the seasoned meat rest in the refrigerator for thirty minutes before cooking helps the flavors meld together and makes the patties easier to shape
03 -
  • Wet your hands slightly with cold water before shaping the patties to prevent the meat from sticking to your fingers
  • Make a small indent in the center of each patty with your thumb to prevent them from puffing up into balls while cooking
