14 - 1 cup sweetened shredded coconut
15 - Green food coloring
16 - 36 small candy eggs or jelly beans
17 - 12 licorice laces or gummy strips for basket handles

# How to Make It:

01 - Preheat the oven to 350°F. Line a 12-cup muffin tin with cupcake liners.
02 - In a large bowl, cream the butter and sugar together until light and fluffy.
03 - Add eggs one at a time, beating well after each addition. Mix in the vanilla extract.
04 - In a separate bowl, whisk together flour, baking powder, and salt.
05 - Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
06 - Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
07 - Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean. Cool completely on a wire rack.
08 - Beat the butter until creamy. Gradually add powdered sugar, milk, vanilla, and salt; beat until smooth and fluffy.
09 - In a small bowl, add a few drops of green food coloring to the coconut and toss until evenly colored.
10 - Frost each cooled cupcake generously. Sprinkle the green coconut over the top to create the grass. Decorate each cupcake with 2–3 candy eggs. Insert a licorice lace or gummy strip into each cupcake to form a basket handle. Press gently to secure.

  • The handles need to go in soon after frosting or they wont stay put
03 -
  • Warm the frosting for 10 seconds if its too stiff to spread smoothly
  • Chill decorated cupcakes for 15 minutes to set everything before serving
