Chocolate Strawberry Yogurt Clusters (Printer-friendly)

Protein-packed clusters with strawberries, Greek yogurt, and a rich chocolate coating for a healthy treat.

# What You Need:

→ Fruit & Yogurt

01 - 1 cup plain or vanilla Greek yogurt, full-fat or low-fat
02 - 1 cup fresh strawberries, diced

→ Sweetener & Flavor

03 - 2 tablespoons honey or maple syrup
04 - 1 teaspoon vanilla extract (omit if using vanilla yogurt)

→ Chocolate Coating

05 - 1½ cups dark or semi-sweet chocolate chips
06 - 1 tablespoon coconut oil (optional, for smoother melting)

# How to Make It:

01 - Line a baking sheet with parchment paper.
02 - In a medium bowl, combine Greek yogurt, diced strawberries, honey or maple syrup, and vanilla extract; stir until strawberries are evenly incorporated.
03 - Drop heaping tablespoonfuls of the mixture onto the prepared baking sheet to form approximately 16 clusters.
04 - Freeze the clusters for 45 minutes or until firm.
05 - Combine chocolate chips and coconut oil in a microwave-safe bowl and heat in 30-second intervals, stirring until smooth.
06 - Dip each frozen cluster into the melted chocolate using forks to fully coat, allowing excess chocolate to drip off before returning to the baking sheet.
07 - Freeze the chocolate-coated clusters for at least 15 minutes, or until the coating is solid.
08 - Serve the clusters frozen or allow them to sit at room temperature for 5 minutes before enjoying.

# Expert Tips:

01 -
  • They taste indulgent but pack in protein and probiotics without any weird aftertaste or chalky texture.
  • You can grab one straight from the freezer and it's ready in seconds, no waiting for anything to soften or thaw.
  • The chocolate shell cracks with a satisfying snap that makes you feel like you're eating something far fancier than it actually is.
02 -
  • Make sure the yogurt clusters are completely frozen before dipping or they'll fall apart and turn into a melted mess in the chocolate.
  • Stir the chocolate between every dip to keep it smooth and warm, otherwise it'll start to thicken and won't coat evenly.
  • If the chocolate gets too thick, microwave it again for 10 seconds and stir before continuing.
03 -
  • Use a small cookie scoop to portion the yogurt mixture so all your clusters are the same size and freeze evenly.
  • If the chocolate starts to harden while you're dipping, just pop it back in the microwave for 10 seconds and stir until it's smooth again.
  • Freeze the clusters on a flat surface first, then transfer to a container once solid so they don't lose their shape.
