01 - Line a baking sheet with parchment paper.
02 - Firmly insert a lollipop stick into each marshmallow without pushing through the opposite end.
03 - Place chopped chocolate in a heatproof bowl and melt over simmering water or in short microwave bursts, stirring until smooth.
04 - Dip each marshmallow into the melted chocolate, swirling to coat evenly, then let excess drip off.
05 - Immediately coat with chosen toppings by sprinkling or rolling while chocolate is still wet.
06 - Place coated marshmallows on the lined baking sheet.
07 - Refrigerate for at least 30 minutes until the chocolate coating is set.
08 - Enjoy chilled or at room temperature.
