19 - 1 cup shredded cheddar or Monterey Jack cheese
20 - 1 cup shredded lettuce
21 - 1 medium tomato, diced
22 - 1/2 cup sour cream
23 - 1/4 cup fresh cilantro, chopped (optional)
24 - Hot sauce or salsa for serving

# How to Make It:

01 - Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until softened, about 3 minutes. Add garlic and cook for 1 minute more.
02 - Add ground beef, breaking it up with a spatula, and cook until browned, about 6–8 minutes. Drain excess fat if necessary.
03 - Stir in cumin, chili powder, smoked paprika, oregano, salt, pepper, and tomato sauce. Simmer for 3–4 minutes, until thickened. Remove from heat.
04 - In another skillet, combine cooked rice, black beans, cumin, chili powder, and lime juice. Warm over low heat for 2–3 minutes. Season with salt and pepper.
05 - Warm tortillas in a dry skillet or microwave until pliable.
06 - Lay a tortilla flat and spoon a quarter of the rice and bean mixture onto the center. Top with a quarter of the beef, cheese, lettuce, and tomato. Add a dollop of sour cream and sprinkle with cilantro if desired.
07 - Fold in the sides and roll up tightly into a burrito. Repeat with remaining tortillas and fillings. Serve immediately with extra salsa or hot sauce on the side.

# Expert Tips:

01 -
  • The beef filling gets this incredible depth from smoked paprika that I discovered by accident when my regular paprika went missing
  • Everything comes together in under an hour but tastes like you spent all day planning it
  • The rice and bean mixture absorbs all those spices while warming, creating these little pockets of flavor in every bite
02 -
  • Overfilling seems like a great idea until everything explodes while you are rolling
  • Lettuce goes on last or it will wilt from the heat of the beef and rice
  • Letting the beef filling cool for even 5 minutes makes assembly so much easier
03 -
  • Warm your tortillas properly or they will crack and tear while rolling
  • Drain the beef thoroughly before adding spices or the mixture will be greasy
