01 - 2 cups cooked chicken breast, shredded
02 - ½ cup BBQ sauce

→ Bread & Cheese

03 - 8 slices sourdough bread
04 - 8 slices sharp cheddar cheese
05 - 4 slices mozzarella cheese

→ Butter & Extras

06 - 4 tbsp unsalted butter, softened
07 - ½ small red onion, thinly sliced
08 - ½ cup pickled jalapeños, drained

# How to Make It:

01 - Toss shredded chicken with BBQ sauce in a medium bowl until evenly coated.
02 - Butter one side of each bread slice. Place buttered side down on preparation surface.
03 - Add cheddar slice, BBQ chicken mixture, onion slices, jalapeños, mozzarella slice, and another cheddar slice. Top with second bread slice, buttered side facing outward.
04 - Heat large skillet or griddle over medium heat. Cook sandwiches 3–4 minutes per side, pressing gently, until golden brown and cheese melts completely.
