01 - Slice each croissant horizontally. If desired, lightly toast the croissant halves in a toaster or oven for 2 to 3 minutes until just warmed and slightly crisp.
02 - With a small spatula or butter knife, evenly spread the softened goat cheese onto the bottom half of each croissant.
03 - Arrange thin apple slices over the goat cheese layer. Drizzle each with 1 teaspoon of honey for added sweetness.
04 - Sprinkle chopped walnuts or pecans over the apple layer. Add a handful of arugula or baby spinach if desired for extra crunch and flavor.
05 - Season the assembled layers with freshly ground black pepper to taste.
06 - Place the top half of each croissant over the filling. Gently press and serve immediately.
